Do you and your family have some favorite summer recipes that you enjoy? I want to make a binder of ideas and I thought I would use this season to start gathering together some ideas!

Hmmmm... the only dish that comes to mind is a pasta and veggie meal I make during the summer to use up veggies from the garden. It is different everytime depending on what veggies I have ripe, what kind of pasta is in my pantry, etc. But it is always yummy and a good way to get lots of veggies in my kid's tummies. =)
While a pound of pasta is cooking, I saute in olive oil any of following, in any quanitity:
carrotts (I slice them long ways)
green, yellow or red bell peppers
I also add a bit of garlic (chopped, I keep the jarred kind in my frigde. Easy) and salt and cracked pepper. When they are almost tender to my liking, I add ingredients for a simple fetticiini sauce. This is not light and healthy! But I'm sure alternate sauces would work fine.
1 stick butter, which I cut up small to melt faster
1 cup. cream
When those are melted and combined (on low heat) I add 1 c. parm cheese, stir just to incorporate and then remove from heat. Drain pasta and pour the sauce/veggie micture over it all. Salt and pepper to taste. Sometimes I add chicken to make it more hearty.
Sometimes I make the sauce a little differently (if I don't have parm or enough butter)....
1 c. cream
1 c. tomato sauce
and then some spicy flavorings which I love: cherry peppers (from the garden or jarred), chili powder, paprike, whatever. This sauce needs thickening with a Tb. of corn starch and water.
Other than this, we like to grill as much as we can... sadly we don't have a grill right now. But grilling is so easy and fast and mess free!

Love it! I've been making some really fun muffins lately because my daughter Sabrina has a taste for them. The other day I made some "Vanilla Caramel Apple Muffins" that tasted divine. I will have to post the recipe. They were so easy to make and they turned out so nice.
I like a good pasta salad in the summer. No particular recipe. Just whatever you have on hand. I start with garden rotini, add a chopped up red pepper, diced tomato, cucumber, black olives, cubed salami (or ham, or turkey...) cubed cheese (I like swiss best) and stir in your favorite Italian dressing. My goal is always to make it colorful and pretty! :)
Another favorite: Cucumber Salad
Use the slicer on your grater to thinly slice two or three cucumbers. Stir in a cup of mayo,equal amounts sugar and vinegar (about 1/4 c.) parsley flakes (for a little color), garlic and onion powder, salt and pepper to taste. Your supposed to refrigerate it over-night if you can wait that long! Mmmmm...I think I'll go make some for dinner tonight! :)
